Barista – Coffee For Cafes

Over 4 hours you will learn the core aspects of espresso creation and how to put them together to make fine coffee.

The trainer is former cafe-owner and coffee lover John Ellis.

This non-accredited class includes a useful workbook to take home and some information on staying hygienic in a hospitality setting. Although there’s no qualification, you will receive a Certificate Of Attendance for your participation.

It’s all about the coffee. Whether you’re after a job in a cafe or simply searching for espresso excellence, this course is for you. John Ellis is passionate about the quality of the coffee you make.

When: Saturday 11 March 2017, 9.30am-1.30pm.

Where: Dungog Festival Lounge, 224 Dowling St, Dungog.

Cost: Adults: $135. Youth (still at school or under 18) through Dungog Shire Community Centre – $50. We will need to pass your details to the Youth Service Facilitator after you’ve booked your spot.

What to wear: Wear comfortable clothes and closed-in shoes. There’s a practical segment to the course.

Beekeeping – A Taster

This practical, hands-on course will cover:

  • working safely with bees
  • how a bee-colony survives, and how to help them live at your place
  • what’s inside a bee-hive: we’ll open some living hives and look around inside
  • bee diseases and pests, and how to deal with them
  • how to extract your own honey, and

Belly Dance

Exotic, flowing, graceful, belly dance is one of the oldest forms of dance. It’s also a non-impact, weight-bearing exercise and is suitable for all ages, with a whole range of benefits for health (see just a few listed below). Above all, belly dance is fun, and a great way to meet others and express your inner self!

Over the 6 weeks of the class, beginners will learn the classic moves, hip flicks, hip turns, figure of 8s – and how to shimmy. Beyond beginner students will move to the next layer and delve into veil work. Both groups will learn a short choreographed piece to perform for family and friends!

This course is for women onlyyou can expect a nurturing, no-fear environment.

This course will suit novices and near-novices of any age. Trainers Tony Skimmings (who teaches I.T. at the high school) and Tim Norris  (from Norris I.T.) have both an impressive understanding of the digital world and the patience and ability to make it Not-Too-Hard for learners.

Come to grips with the jargon, move around by keyboard or mouse. Explore the world over the internet, send and receive email. Open, edit and save a document. Deal with difficulties. Find out about security. Discover what your “next step in tech” might be.

Of course we can’t cover everything in one course, so we’ll find out when you book what your specific computer needs will be and tailor the training for the class.

Provide First Aid – Saturday 16 Sept

Learn all aspects of routine first aid, to a certificate standard. What’s covered: CPR for adults and infants, fractures, sprains, burns, control of bleeding, responding to heart attack, asthma, snakebites and exposure, and much more. All led by experienced district local Sonja Medcalf (Registered Training Organisation Parasol Ltd).

A First Aid Certificate is now considered mandatory for many jobs – but above all, it’s the knowledge of what to do when the worst happens.

Looking for re-certification? You can renew your current certificate by doing the same class without doing the preparatory first part, for a lower price.

Can you renew just your CPR component? Yes. Some jobs require annual renewal of the Provide CPR component of the First Aid course. We offer that option. You need to be there at the start of the class, and will be complete after about 3 hours, including your practical and theoretical test. (If you’re doing the two evenings, you attend on the first evening.)

Note: Students without a current certificate are required to complete an on-line workbook prior to the commencement of the course. This takes the place of a day’s training and is best done with the help of your manual.

Students doing the re-certification do NOT need to do the workbook but must present their current certificate or wallet card.

Get your USI: All students of accredited courses in Australia now need to provide their Unique Student Identifier number or USI to the trainer in order to receive their certificate. This is free and can be done at this website: http://usi.gov.au.

Rammed Earth Works

Learn by doing! Build a foundation and then use formwork to build a low, walled structure. For a pizza oven!

Rammed earth is an old building technique made new again. It offers strength, thermal mass, beauty. In this workshop with local building designer Tom Chen and builder Shane Hannan you’ll get your hands literally dirty.

Discover how to peg out to your dimensions, install formwork, process clay, mix your materials (cement is used in this version), and ram the mix. Then do the same thing for a more complex 3-walled base (for a pizza oven). Put in a “services” box eg for power or water.

Finally the next steps will be explained, including how to seal the surfaces when they’re ready, known issues and your own situation. Rammed earth is brilliant for retaining walls, a feature wall, garden wall and so much more.

When: Sunday 28 May 2017, 8.30am-3.00pm.

Traditional Bread Baking

In this practical hands-on course, you will discover how to turn a few simple ingredients – wheat, water, salt and some yeast or sourdough “ferment” – into delicious bread.

This course will cover:

– how flour is milled and the importance of fresh-milled flour
– how to establish and maintain a “sweet” sourdough starter
– mixing and developing dough by hand
– kneading and shaping techniques on the table
– methods for using wholegrain and lighter flours
– rising procedures and baking techniques, tricks and tips, especially for the home oven
– plus a little history – grains and their significance in the development of human civilisation.

Each participant will make 3 loaves of bread to take home:  a traditional wholemeal loaf, a freestanding cob and a baguette or French stick. We will use wheat, rye and spelt flour from Fosterton Farm’s own famous mill.

The last one filled fast, so get in quick!

Fosterton Farm Bakery’s focus is on providing nutritious, tasty breads and other products based on traditional baking techniques. The Bakery’s small stoneground milling operation stands beside the bakery producing the freshest flour from grain purchased from biodynamic and organic farmers.

Owner/baker Simon Brownbridge, has 30 years experience in natural baking techniques, working for commercial operations and setting up his own businesses. Simon is a passionate advocate for good bread being available in the community. For him, nutrition is the foundation of good health.
