Italian Cooking 20 September (bookings open soon)

Nowadays Italian is practically Australia’s national cuisine. Aromatic, healthy, and relatively easy, it’s also a crowd pleaser. This course will be mostly about some straightforward classics – and a couple of more challenging ones.

The menu is still being shaped, but you can expect to be making and trying:

– a couple of entrees, such as arancini rice balls, stuffed peppers, dumplings or carpaccio

– two pasta courses (gnocchi with basil and burnt butter, tagliatelle)

– a classic main

– a user-friendly vegetarian side dish, such as eggplant parmigiana

– and a couple of desserts, such as tira misu, semifreddo, Sardinian biscuits or cassata.

Chefs will arrive at 2.30pm, review the recipes, learn something about the ingredients, and prepare and cook up ‘una tempesta’. Diners will arrive later, engage in a couple of educational activities, and then Everyone eats. Chefs take home recipes and leftovers if there are any!

Marisa Groves has also taught our Cooking With Roses class, and catered for our Masked Ball. She is of Sardinian extraction and has travelled extensively through the region.

When: Saturday 22 November 2014, starting 2.30pm (for chefs) or 6.45pm (for diners).

Where: the kitchen under the grandstand at the Dungog Showground.

Cost: $89 for cooks, $39 for diners.
