Winter Pizza & Camp Oven Delights

Out of our own wood-fired oven …

Winter is the time for fennel, spinach, pumpkin, sage, potatoes, jerusalem artichokes, mushrooms, pickles, smoked salmon… not to mention oranges, hazelnuts, rhubarb and chocolate!

As well as delicious pizzas out of winter ingredients, in this yummy workshop you will also use camp ovens on coals to make a warming winter main course and dessert.

With the wood-fired oven already fired up, participants will put together a feast for the season. There will be

– glam delights like potato and jerusalem artichoke pizza

– mushroom and feta pizza recipe courtesy Peter Vickery (“the Vicar of Nibbly”)

– smoked salmon pizza

– family fare with ham and pineapple

– a dessert pizza featuring both chockie and oranges.

And in the camp oven:

– scrumptious cardamum-wrapped chicken

– a warming winter fruit crumble.

We are thrilled to announce two recipes will be contributed specially for this course by Peter Vickery and Barbara Sweeney. Peter Vickery is a former masterchef Top Ten contestant. These days he writes a food blog and appears on Newcastle radio as the Vicar Of Nibbly. Barbara Sweeney is a food writer for the Sydney Morning Herald and Country Style magazine. Early arrivals can help fire up the Dungog Shire Community Centre’s wood-fired pizza oven and learn some technique from oven builders Clare and Shane. Kids are welcome (with paying adult) at kids’ prices. And there will be enough to eat so you won’t need dinner.

Cost: $25, kids $15. Discount rate for those who did the Build A Wood-fired Pizza Oven course in 2012 of $20.

Bring Your Own: apron and sharp knife, if you have one. Wear enclosed shoes – there’s some hot things happening. Oh, and dress warmly – it’s winter!
